Veracruz All Natural Multiple Locations
The migas taco that launched a thousand brunch pilgrimages, and the crown still fits. What started as a trailer is now a citywide institution, and the fact that it can scale to multiple locations without the magic leaking out is exactly why it's the winner. If you're introducing someone to Austin tacos, you start here and let the rest of the list argue for second place.
Cuantos Tacos
Mexico City-style mini tacos done with real swagger, this is the order-three-and-then-order-three-more spot for purists who want their suadero and not a breakfast burrito.
De Nada Cantina

Love it or call it the bougie option, it earns the finalist spot by being reliably very good across every location. The Otto and the green sauce alone keep it in the conversation.
